Ingredients

Mix Dry:

  • 2C Cornmeal (Bob's Red Mill, Medium Grind)
  • 1T Baking Powder*
  • 1t Baking Soda**
  • 1t salt

Wet:

  • 1C Buttermilk
  • 2 beaten eggs
Preparation

 

  1. Preheat oven to 425º
  2. Place 8" cast iron skillet in oven with 6T butter to melt
  3. When butter is melted, add 4T to wet ingredients. Add 1/4C plain cornmeal to skillet, put back in oven till butter evenly coats cornmeal (add a little more butter if needed). 
  4. When the skillet is hot, mix the wet with the dry ingredients. Do not over mix.
  5. Bake t 425º, 18-20 minutes. Immediately turn upside down into plate. Enjoy!
